Smoked trout salad with horseradish dressing

Serves 2


For the salad
2 smoked trout fillets
A bag of rocket leaves or other peppery salad
100g cherry tomatoes – halved
Half a cucumber – finely sliced and cut into half moons
2 bell peppers (yellow, red and/or green) chopped

For the dressing
4 tbsp extra-virgin olive oil
2 tbsp hot horseradish sauce
1 lemon, 1/2 finely zested and juiced


  1. Flake the salmon
  2. Mix with the rocket and other salad ingredients
  3. Whisk the dressing ingredients together
  4. Pour the horseradish dressing over the salad and mix well
  5. Serve with the remaining half lemon cut into wedges
